STEP BY STEP DETAILED RECIPE

First, Let's Gather Our Ingredients
- Eggplant (Brinjal/Baingan) - 4 medium-sized long ones
- Peanuts - 1 tsp
- Poppy seeds (Posta dana) - ½ tsp
- Tomato - 1 big sized
- Ginger, Onion & Garlic Paste - ½ cup
- Dried Red Chillies - 2 nos.
- Yoghurt - 2 tsp
- Curry leaves - Handfull
- Turmeric Powder - 1 tsp
- Garam Masala Powder - 1 tsp
- Maggi Masala - 1 tsp (instant noodle spices)
- Oil - for frying the Eggplants
- Paneer or Parmesan Cheese - half brick for garnish
- Coriander Leaves - A handful for garnish
- Salt - As per taste.
Step by Step Eggplant Curry or Baingan Bahar Recipe
STEP 1: Cut the Eggplant into halves from the crown caps and deep fry it. (You can use an Air Fryer for this step, it's much healthier.)
STEP 2: Heat a tsp of oil in a Pan and throw in the Red Chillis and Curry Leaves.
STEP 3: After the leaves starts to crackle, pour in the Ginger, Garlic and Onion Paste, along with Turmeric powder and then slow cook it until it oozes out oil. Now, pour in the Tomato Paste and allow it to get cooked.
STEP 4: Now, sprinkle the Garam Masala Powder, Maggi Masala and Salt as per your taste. Stir well and continue cooking on medium to low flame.
STEP 5: Now quickly make a paste of Yoghurt, Peanuts and Poppy seeds and pour it in the cooking mixture. Cook for only 2 minutes and take it off the fire.
STEP 6: Finally keep the Fried Eggplants or Baingan on your serving plate and pour the gravy on top of it. You can keep the consistency of the gravy as per your requirement. Decorate it with finely chopped coriander leaves and Crushed Panner or Parmesan Cheese and serve it hot.
NOTE: This is best enjoyed with Paratha or flatbread.
