Traditional Polish Mazurek or Mazurka Cake is a flat pastry or Flat cake variety that attracts you towards itself because of its unique shape and colorful disposition. It is very soft and fluffy. The secret behind this is the use of hard-cooked egg yolks which are pushed through a sieve and added into the cake batter. This simple trick makes cakes and pastry very soft that it’ll melt in your mouth in a fraction of second and the after flavor will leave you wanting for more.

Here I have shared the recipe of one such finger licking dessert which is very famous in Poland all over the year and especially during Easter.
Recipe of Polish Royal Mazurka
Ingredients for Making Mazurka Cake:
- 170gm butter at room temperature
- Sugar 4tsp
- 6tsp ground blanched almonds
- ½tsp lemon zest
- 2/12 cups of regular all-purpose flour
- 2 hardboiled egg yolks pushed through a sieve
- 1 egg’s raw egg yolk
- A pinch of salt
- A pinch of cinnamon
- Icing sugar for garnish

How to Make the Traditional Polish Mazurek:
- Step 1: Mix butter and sugar using an electric blender or using any hand blender until this mixture becomes fluffy
- Step 2: Now in this add all the remaining ingredients, the grounded almonds, the flour, the lemon zest, 2 hardboiled egg yolks sieved, the raw egg yolk and a pinch of salt and cinnamon. Bring all of this together using your hands and making it into a soft dough. If it all comes together it means you’re good.
- Step 3: Wrap the dough in a plastic wrap and allow it to set in a refrigerator for 30 minutes
- Step 4: Bring it out and cut ⅓ of the dough and place it back in the refrigerator. Meanwhile, roll out the remaining chilled dough on a parchment paper and place it on an 8 inch-by11-inch tart pan with a small sheet of butter paper. If the base of the pan is removable then it’s the easiest way out or else any paper works just fine
- Step 5: Pierce the dough with a fork and using a pastry brush egg wash the dough. (egg wash is really easy, just mix one beaten egg with a tsp of water).
- Step 6: Now get the resting ⅓ dough from the refrigerator. Roll it to a thickness of ⅛ inch thickness. After this cut it into ¼ to ½ strips and arrange it in criss-cross fashion over the dough. Egg wash the lattices.
- Step 7: Bake this into a preheated oven at 375 degrees F for 20-30 minutes. It’ll turn light golden brown in color and that’s your indicator that your Mazurek is done.
- Step 8: After your Mazurek cools down to serve it on a plate. Fill in the open spaces between the lattices with fruit preserves or your favorite jam, with the help of a piping bag. You can also use fruit slices or nuts or chocolate to garnish it.
- Step 9: Sprinkle icing sugar over it for the frosty and delicious look and serve with endearment.
