This is simply fried egg with a bacon, blueberries and shredded cheese.
This is so ridiculously easy, that people should be banned from making this for Easter brunch. 😀 Just joking.
Fried Bunny Eggs Easter Brunch
So, I first found this recipe somewhere around 2019 and it was served to me one morning by my girlfriend who still happens to be my only constant.
It was Easter Sunday, and she made me this. And it was our first Easter Sunday as a couple.
And, you know we were in that phase of our relationship when I would be showing her things I like and she would be baking something she knew really well or cooking simply fried eggs for me.
And, this recipe for Bunny Fried Eggs happened by accident.
And, when I asked her if it's okay to publish her recipe on my blog she was absolutely against it.
It took me 3-4 years of convincing and probably about 10 other people to tell her that it is yum 😋 to get it here.
Ingredients to Make Fried Egg Bunny
- Butter
- Fresh Egg
- Bacon
- Shredded Cheese
- Blueberries
How to Make Bunny Eggs?
Make Fried Egg
- Melt ½ tablespoon butter over low heat until you see it foaming.
- Add fresh egg. Sprinkle a pinch of kosher salt and a few grinds of black pepper.
- Cook for 2-3 minutes until the white is firm, but the yolk looks runny. (do not flip)
Cook Bacon Strips
- Place bacon strips in a cold pan.
- Cook the bacon on low heat slowly, twisting and turning making sure it browns evenly.
- When the bacon strips are browned to your liking, transfer to a paper towel to drain.
Make Bunny Eggs
- Use a pair of scissors to break the bacon strip in half. Shape them to look like bunny ears.
- Place the fried egg on a plate.
- Keep the bacon slices below the eggs from the top.
- Add two blueberries to make the bunny eyes.
- Add six slices of shredded cheddar cheese to make bunny whiskers.
Tips to Make the Best Bunny Eggs
- Always use fresh eggs - If you use eggs which have been kept in the fridge for one day, the white will spread and a lot but if you can manage it with a spatula to get a round shape, then that's okay. But, Sunny Side Up is always made with fresh eggs.
- Use a non-stick skillet - Or a cast-iron skillet to make the best fried eggs.
- Low and Slow - This is especially true when making Sunny Side up. Lower the heat and cook slowly making sure the eggs are not overcooked.
- Use a cold griddle to cook bacon - Cooking bacon on the stove is much easier and always my preferred choice. You don't have to wait for the oven to preheat. I always prefer a wide flat bottomed 12" frying pan.
- You don't need oil to cook bacon - Bacon in itself is a sturdy amount of fat. Initially, it might be sticking to the pan. But, eventually when the fat oozes out of bacon it'll come out easily.
- Always use paper towel - You don't want your bunny eggs to look messy. So, keep a newspaper or paper towel handy over a plate. Keep the fried bacon over the paper towel and let it absorb all the grease.
Bunny Eggs | Easter Brunch Recipe
Ingredients
- 1 tablespoon unsalted butter
- 2 large fresh egg
- Kosher Salt and Freshly Ground Black Pepper
- ¼ lb regular cut bacon
- 12 slices shredded cheddar cheese
- 4 pieces blueberries
Instructions
Cook Bacon on the Stove
- Line a large plate with parchment paper. Set Aside.
- Lay bacon strips into the cold pan. Make sure the bacon doesn't overlap. Bacon will cook more consistently when they are not overlapping.
- Heat the pan/skillet over medium/high heat.
- Cook bacon strips for 4-5 minutes on each side. (neither too rubbery nor too crispy)
- for rubbery pieces of bacon - cook for 2-3 minutes on each sidefor crispy pieces of bacon - cook for 5-6 minutes on each side.
- Transfer cooked bacon to a lined plate.
Make Fried Egg Sunny Side Up
- Heat a cast-iron skillet or non-stick pan over medium/low heat.
- Melt butter over low heat until foaming. Tilt the pan to evenly distribute the butter all over the pan.
- Break the egg into the skillet. Season with salt and few grinds of black pepper.
- Cook until the whites are set and the yellow is runny.
- Transfer to a plate.
Make Fried Bunny Egg
- Use a pair of scissors to break the bacon strip into two. Shape the bacon to look like Bunny Ears.
- Place the bacon bunny ears below the fried egg at the top end.
- Add two blueberries to make the eyes for the fried bunny egg.
- Use six strips of shredded cheese (three on either side) to make the whiskers for the bunny fried egg.
