Butter Chicken Ingredients:
1st Step of Marination:
- 1 Lb or ½ Kg Chicken (you can use both bone or boneless)
- ¾ tbsp lemon juice
- ¼ tsp Salt
- ½ tsp Paprika or Red Chili Powder
2nd Step of Marination:
- ¾ tsp crushed Kasuri Methi or Fenugreek leaves
- 1 tbsp ginger garlic paste
- ½ cup thick curd
- ⅛ tsp turmeric powder or haldi
- ¾ tbsp oil
- ½ to ¾ tp garam masala powder
3rd step for the creamy and authentic Butter Chicken Gravy:
- 2 tbsp butter
- 2 inch long dalchini or cinamon
- 2 Elaichi or Green Cardamom
- 2 Laung or cloves
- 1 -2 slit green chilies
- 4 large tomato puree (also remove the seeds)
- ½ to ¾ tsp garam masala
- 10 cashew nuts or roasted almonds
- ½ tbsp crushed kasuri methi or fenugreek leaves
- ¼ tbsp sugar
- 80 to 100 ml cream
- coriander leaves for garnishing
Step By Step Butter Chicken Recipe
1st step is to do the preparation for butter chicken
- Clean the chicken under running water and dry them out.
- Marinate with Salt, lemon juice and chili powder
- Next use hung yogurt, kasuri methi, oil, turmeric powder, ginger garlic paste, and garam masala for marination.
- Refrigerate and let it chill for around 4 hours.
- Keep your cashews soaked for an hour and make a thick paste.
- Make the tomato puree.
Here's how to make butter Chicken (Authentic)
- Grill the chicken in oven , pan or tandoor.
- For oven preheat to 240 C for 20 minutes and grill it for at least 20 to 30 minutes
- If you're grilling on a pan then you must put 1 tsp butter and then add your marinated chicken.
- [ When you're Grilling on Pan] Next fry your chicken on high flame until all the moisture is out from the pan. (you need to keep them tossing and turning or else they might burn). Cook it until you think they are completely cooked and keep it aside on a separate plate.
- Next, heat up the pan with butter.
- Add Cinnamon, cloves and cardamoms and fry it nicely for at least 2 to 3 minutes.
- When you smell the fragrance, then its time to add the ginger garlic paste along with slit green chilies.
- Next, add your tomato puree along with sugar, salt and red chili powder.
- Keep stirring until the tomato puree gets completely cooked. when you see oil oozing out from the sides, you'll know it's done.
- Add in 1 cup (300 ml) of water.
- Add fenugreek powder or Crushed Kasuri Methi along with cashew or almond paste.
- Depending upon the kind of gravy you want you may add or reduce water in the gravy.
- Boil it from at least 5 minutes
- Again sprinkle some fenugreek powder and garam masala and simmer it for 3 minutes (max)
- Garnish your butter chicken with freshly chopped coriander leaves and some cream.
