Thanksgiving is finally here. I think Thanksgiving is the most awaited holiday of the year. For the much awaited good food, good company and of course the great turkey. Celebrated in US and Canada, Thanksgiving is celebrated on the 4th Thursday in the month of November.A perfect, Thanksgiving turkey and the aroma that fills the room when it gets cooked is all you want during chilly Novembers. A juicy and succulent turkey with lovely brown crust on the top brings the entire family and friends together for an ideal holiday celebration.

Cooking turkey isn’t as difficult as you might think. You can get salted or brined turkey in stores today or you might even do it at home. But soaking it n the brine solution along with some herbs is the secret to a juicy and succulent turkey. Another interesting secret I’ve learned is that you can use aluminum foil over the roasted turkey. This’ll serve multiple purposes. The first thing it’ll now allow your turkey to get overheated or overcooked and hence all the moisture will be preserved. Secondly, that'll keep the turkey soft and juicy.
Now without further ado, let’s start with our dish before it gets late.
Ingredients:
- 1 whole turkey
- 2 cups of Kosher salt
- ½ cup melted butter
- 2 large onions
- 4 carrots
- 4 stalks of celery
- 2 sprigs of fresh thyme
- 1 cup dry white wine.
Method:
Step 1: Marinate the turkey completely both inside and outside with kosher salt
Step 2: Place it in a large cold water pot and let it rest in the brine solution for 12 hours or overnight.
Step 3: Now pre-heat your oven to 350 degrees F and meanwhile, rinse your bird thoroughly and throw away the brine solution.
Step 4: Now use your butter and brush it on the turkey. Put the breast side down on a roasting tray. Stuff the turkey with 1 onion chopped, ½ of the carrots chopped, ½ of your celery and a single stalk of thyme. Also place a bay leaf inside. It’ll impart a unique caramelized flavor to the filling and now finally cover it all with white wine.
Step 5: Now you can place your turkey to get roasted for 31/2 to 4 hours. After around 1 hour 50-55 minutes carefully get the tray out and slowly turn the turkey over. This time, breast side should face up. Grease it with your remaining butter and allow it to get roasted for remaining 30 minutes or so.
Step 6: Now get your bird out of the oven and place it on your serving platter.

Tips for the perfect holiday garnish
- After hours of hard work, you’d want to present this in such a manner that it reflects your hard work and love.
- Place it in a pan or big chopping boards or long center platters.
- Garnish with fresh herbs or lettuce or kale leaves
- You might also want to use roasted vegetables to garnish the bird
- You can also use cranberries or pomegranates to garnish your platter.
