Mardi Gras is the last day before the strict lent season begins. Lent season is a time when you got to avoid and abstain from rich and fatty foods. You have to remain in fast. And, that's the reason people celebrate Mardi Gras as a kind of a farewell before the strict season of lent starts the next day - which is Ash Wednesday.
