Typically the Hydrabadi Paneer recipe is supposed to be much more spicy and tangy. However, this is my version of this classic recipe. Hyderabad is a city in the South Eastern Part of India. And this city offers you a billion types of cuisines. A brilliant combination of South Indian and Nawabi Culture dominates Hyderabadi Cuisine and that is so well reflected in the daily lifestyle of the people of Hyderabad.
This recipe is adapted from the dingy lanes of the old city of Hyderabad. This recipe tries to adapt to the fast-paced lifestyle of modern India and also combines the tasty Indian flavors, which you thought takes forever to cook. The brilliant fusion of North Indian Delicacy - Paneer, when combined with the tangy and spicy flavors of Southen India; you have a recipe which is truly one of its own kind. While North Indian Paneer Recipes have mostly cream and coriander seeds dominating flavors, when you use the same ingredient in Southern India, you have a much tangier & spicer version.
I believe it's the interesting combination of Spices like Dried Red Chillie, Mustard Seeds, Curry Leaves and Tamarind Pulp that makes all the difference in a South Indian Cusine. While people all over the world easily relate South Indian Cuisines to merely Dosas, it's so much more than that. I implore you to visit South India once. First, Let's Gather Our Ingredients
- Paneer (Cottage Cheese) - 250 grams diced
- Ginger, Onion & Garlic Paste - 1 cup
- Dried Red Chillies - 2 nos.
- Curry leaves - Handfull
- Turmeric Powder - 1 tsp
- Red Chilli Powder - 1 tsp
- Cumin Powder - 1 tsp
- Coriander Powder - 1 tsp
- Garam Masala Powder - 1 tsp
- Tamarind Pulp - 2 tsp
- Oil - 2 tsp
- Mustard Seeds - handfull
- Salt - As per Taste.
- Sugar - As per Taste.
Step by Step Hyderabadi Paneer Recipe
STEP 1: Throw in 2 medium-sized Onions, 1 inch Ginger, 5-6 Garlic Cloves and 2-4 green or Red Chillies in the mixer and grind it into a smooth paste. (In the video I have used green chilies, coz I had no red ones. Ideally, you should use Dried Red Chillies for the spicy effect).
STEP 2: Heat 2-3 tsp of oil in a Pan and throw in the Mustard Seeds. Allow it to splatter.
STEP 3: After the mustard seeds starts to crackle, pour in the Ginger, Garlic and Onion Paste, along with Turmeric powder, Red Chilli Powder, Cumin Powder, and Coriander Powder.
STEP 4: Now, slow cook it until it oozes out oil and keeps adding water as per the requirement of your gravy. Also, add the Tamarind Pulp now.
STEP 5: Now, season it with Salt and Sugar as per your taste. Stir well and continue cooking on medium to low flame.
STEP 5: Finally, throw in your diced Paneer Cubes and just take a few curry leaves and sprinkle it on your cooking mixture. (I always prefer giving the curry leaves at this stage so as to keep its flavors intact).
STEP 6: Finally sprinkle some garam masala powder and stir well to mix it in.
STEP 7: Now, just turn off the fire and serve it in a bowl.
NOTE: This is best enjoyed with Paratha or flatbread.
