Paella Valenciana history goes like this. Paella Valenciana was originally cooked by farm laborers using rice and green & white beans and tomatoes. For extra flavors, rabbits or chicken and snails were added along with saffron. This was previously eaten straight from the pan using wooden forks.
Valencia region is one of the largest producers of rice since it was introduced by Moors over 1200 years ago. Since Valencia region is a coastal region hence over time a lot of seafood crept into Paella. But still, the authentic ones are made of just rabbit, snails, and chicken.

Paella Valenciana Recipe Origin:
The origin of the name is still disputed. Some believe that it was first prepared by a lover for his fiancée and the word is derived from the Spanish word(para-Ella) which means ‘for her’. So even today although women do most of the cooking in Spanish households, this dish is specifically made by men of the house. Well, typically the name Paella could also mean a “Pan” as in Valencia pan is called “la paella”. Valencian language roots back to Latin and in Latin to the word “patella” refers to a “pan”. Another theory says that it could have been named after the Arabic word ‘Baqiyah” which means “leftovers”.
