has a distinct taste that makes this dish stand out from other Indian Chicken curry recipes list. Chettinad Chicken is made in the traditional Chettinad style. These days Chettinad Chicken Curry is gaining a lot of popularity owing to its unique taste and spicy flavors. Popular all over south India, Chettinad Chicken is not easy to make. After taking inspiration from Swasthi's Recipes and trying it on my own I have created this. I think it is best enjoyed with jeera rice or plain rice with ghee (of course).

Chettinad Chicken Ingredients:
1st Step - Collecting the essentials
- 1 Lb or ½ Kg Chicken (bone)
- 2 tbsp oil
- 1 large freshly chopped onion
- 1-2 curry leaves
- 2 medium sized tomato puree
- 1 bay leaf
2nd Step - Marination:
- 1 tbsp ginger garlic paste
- 1tbsp thick curd
- ¼ tsp chili powder
- ⅛ tsp turmeric powder or haldi
- salt as required
3rd Step - Making the authentic Chettinad Masala
- 1 tbsp coriander seeds
- 1 inch long dalchini or cinamon
- 3 Elaichi or Green Cardamom
- 4 Laung or cloves
- 4-5 red chilies
- 1 tbsp poppy seeds
- ½ to ¾ tsp garam masala
- ¼ cup grated coconut
Step By Step Chicken Chettinad Recipe
1st step is to do the preparation for Chettinad chicken
- Clean the chicken under running water and dry them out.
- Marinate with Salt, turmeric, yogurt, and ginger garlic paste.
- Dry roast the coriander seeds on a low flame until it becomes fragrant. Add into that cardamom, cumin seeds, fennel seeds, pepper, cinnamon and cloves.
- In that add poppy seeds and keep stirring.
- Next, add coconut and fry until you smell the cooked smell of coconut.
- Cool all of these and blend them nicely with a little water.
- Make a smooth paste and set it aside.
- Make the tomato puree.
Here's how to make Chettinad Chicken (Authentic)
- Add oil in a pan and heat it.
- Add bay leaf and onions and keep stirring until they are translucent.
- Now take all of your chicken and fry them until 4 to 5 minutes.
- Now add the tomato puree, salt, chili powder, turmeric and keep stirring. when you see oil oozing out from the sides, you'll know it's done.
- Now add the grounded paste along with few curry leaves and fry them for 2 to 3 minutes.
- Now add 1,¼ cup of warm water.
- Cover and cook until your chicken is completely done.
- Depending upon the kind of gravy you want you may add or reduce water in the gravy.
- Garnish it with some aromatic fried curry leaves
- Serve it with rice.
