It starts with cubed Chicken breasts, however you can also go with Chicken thighs.
However, I like it with Chicken breasts - keeping it low in fat, high in protein.
I always cook the chicken first because as they brown, they leave a layer of juicy flavor in the skillet, making a tasty base layer for the veggies to pick up some of it.

The Best Chicken Stir Fry Sauce
Well once we are done with the Chicken and Veggies, it's time to get working on the Stir Fry Sauce.
The sauce is what gives flavor to the dish and basically blends in everything together, creating an appetizing meal for you.
The sauce is simply a combination of these simple ingredients:
- Honey - I like it a bit sweet. A touch of sweetness gives your Chicken stir-fry that authentic Chinese taste and both kids and adults love it.
- Toasted Sesame Oil - It's a must. I highly recommend it to get that nutty taste.
- Soy Sauce - You cannot call it Stir-fry without soy sauce. Gets you that Umami taste.
- Low Sodium Chicken broth - It thins out your sauce and adds depth of flavor.
- Cornstarch + Water - Basically cornstarch slurry to create that restaurant style Chinese Chicken Stir Fry thickness.
- Crushed Red Pepper Flakes - I love it because it balances out the sweetness of the Honey, but, it's totally optional.
What Vegetables Do you Put in Stir Fry?
The answer is - Your favorites!
Play your favorites and only choose the ones you like. You can go with carrots, peppers, broccoli, mushrooms, green beans, snap peas, snow peas, green onions and etc.
I am a huge fan of Pepper, Onions, and Snap peas. So, I just have to have it in here.
I remember how as a kid, I used to look out for snap peas. They were sweet and as a kid I just loved them. And till date, snap peas are my favorite part about Stir fry.
And lastly, I always go with green onions. They add a crunchy layer for the chicken stir fry.

First you cook The Chicken. Always Start with cooking the chicken and then cook Vegetables after the chicken is perfectly done. When I say perfectly done, I mean ensure the chicken breast is thoroughly cooked through. But not over-done. Ensure it gets that crispy on the outside and juicy on the inside texture.
The Secret to a good stir fry chicken?
- Make sure you cut chicken into even size pieces so that they cook evenly.
- Always cook the chicken and vegetables separately. You don't want the vegetables to cook more than required because they will lose its nutrients and the crispy texture. Ideally, you should saute vegetables until they are tender crisp and not super-soft or mushy.
- You want to cook the chicken just until they are done. Overdoing them will make them chewy and you want to cook them just until they are crispy on the outside and juicy on the inside.
- Simmer the sauce for a minute, after you've added it to the chicken and vegetable stir-fry, to ensure all the flavors blend in.

- Always cook your protein first.
- Cook your vegetables separately and combine them only after they are fully cooked.
- Always add the sauce after everything is more or less cooked through.

Chicken Stir Fry Recipe
Ingredients
- 1 lb boneless skinless chicken breast cut into 1 inch cubes
- salt and pepper as per taste
- 2 tbsp olive oil divided
- 1 medium onion diced
- 2 cups broccoli florets
- ½ yellow bell pepper cut into 1 inch pieces
- ½ red bell pepper cut into 1 inch pieces
- ½ green bell pepper cut into 1 inch pieces
- ½ cup baby carrots sliced
- ½ cup green onions finely chopped, divided
- ¼ cup snap peas divided
- 2 tsp minced ginger
- 2 garlic cloves minced
Stir Fry Sauce
- 1 tbsp cornstarch
- 2 tbsp cold water
- 1 tbsp toasted sesame oil
- ¼ cup low sodium chicken broth
- 3 tbsp low sodium soy sauce
- ¼ cup honey
- ½ tsp crushed red pepper flakes optional
Instructions
Make the Stir Fry Sauce
- in a medium sized mixing bowl, whisk cornstarch and cold water. Add all the other ingredients (soy sauce, honey, toasted sesame oil, red pepper flakes, and chicken broth). Whisk well until combined. Set aside.
- Heat one tablespoon of olive oil in a wok or a large skillet over medium high heat.
- Add chicken (in batches, if necessary) and season it with salt and pepper as per taste. Cook for 3-5 minutes or until cooked through. Remove from skillet and set aside.
- Reduce the heat to a medium and add the remaining tablespoon of olive oil to the skillet.
- Add minced garlic and minced ginger, and cook until fragrant.
- Add onions, broccoli florets, bell pepper, carrots, some of green onions, and some of snap peas (and other veggies that you're using) and cook, stirring occasionally just until 'tender crisp'.
- Add chicken back into the skillet and stir to combine everything together.
- Whisk the stir fry sauce and pour it gently over the chicken. Gently stir to combine.
- Bring the sauce to a boil, stirring occasionally and allow it to boil for a minute or two until the sauce is thick.
- Garnish with remaining snap peas and green onions and serve with rice or noodles or chow mein if desired
